Stuffed tomatoes with courgette and olives

9 Tomatoes
Black kalamata olives
1 Courgette
Olive oil

While you prepare the tomatoes preheat the oven to 200 C. Take the inside of the tomatoes out (you can save it for a salsa for example). Cut olives and courgettes into small cubes and add oil, salt and pepper. Fill the olives with the filling and add on a tray. Keep them in the oven just about 15 mins so that they soften up.

Once they are ready, you can add fresh basil and chives. It's a great side dish and does with so many foods! I love it even risotto.
